Frozen Tapioca Pudding
August 16th, 2010 by The Leftover Queen
How about a delicious frozen twist to an old classic? I am sure many of you have enjoyed some delicious frozen custard this summer, so why not frozen pudding? This is best served right after the initial churning in the ice cream maker – kind of like a soft serve. I like to sweeten my tapioca with maple syrup and a little cinnamon. This extra little flavor adds a lot of dimension to this tasty frozen treat!
We are busy enjoying summer here on the homestead with a lot of out of town visitors. Hope everyone is having a great summer!

What a great idea! I’ve never thought about freezing tapioca pudding… does the tapioca still retain some of its infamous texture when frozen?
Going to put this on my “to do” list!

Great idea, Jenn. I have tapioca in my pantry in Florida. I’m going to try this when I get back from Atlanta.
Hope your’e having a nice time entertaining!
p.s. I’ve been drizzling maple syrup on my sweets with a sprinkle of cinnamon every since I read something you posted about month ago-it’s good!

That is a wonderful idea. I love ice cream and I love tapioca pudding, why not combine the two? Alas, I don’t have an ice cream maker, so I will have to file this away for a time when I have more space and can make this treat. Thanks for the inspiration.

Typically, tapioca is a winter dessert here, making it into an ice-cream can be interesting!!

Hi V – I didn’t actually post a recipe for the pudding. You can use your favorite! I use Bob’s Red Mill Tapioca pearls, and I use the recipe on the bag – except that instead of sugar, I sweeten mine with maple.

I so agree about cooking with friends. I stopped, though, when I saw blue crab. I was raised on it and I love it to death. Crab cakes had special meaning in our family and when I married Doug he loved them so much that every time we visited Pennsylvania, a crab cake dinner would be waiting. It became a tradition we looked forward to.

I’ll hold on to this for National Tapioca Pudding Day – July 15th. Which is also my brother’s birthday, who’s favorite dessert is – you guessed it – tapioca pudding. I might do this in chocolate….My favorite tapioca pudd. Cinnamon, – or cinnamon whipped cream – would really put it over the top,
