Hey Jenn! My only issue with eggs is the problem of improper treatment of animals, so I try to use substitutes. I love eggs though, and I eat them like a mad woman when I can get organic eggs from a small, reputable farm. They are certainly a perfect food! Your custard looks stellar too, and I prefer a drizzle of maple to sweeten something up over an overly sugary dessert any day.
