Recipe: Chicken Caprese Burger
Summer time is grilling time. There is just something so laid back and simple about summer foods – throw some stuff on the grill, whip up a quick salad full of fresh veggies, serve a frozen treat for dessert, and invite some friends over. Like everyone else, we have been doing a lot of grilling this summer. But a menu of the same burgers and hot dogs can get boring after a while (well, maybe…), so I wanted to try something different.
I came across some organic free range ground chicken at the grocery store, so I picked up a package. I also had some leftover mozzarella cheese from a pizza night. So I decided to make some chicken burgers with mozzarella, fresh heirloom tomatoes and fresh basil. I drizzled everything with some balsamic glaze we got in Italy and this yummy Jalapeno-Lime and Sun Dried Tomato Tapenade I picked up at Pier One (I know it was weird, but believe me, this stuff is awesome!) from O Olive Oil . I served the burgers with fingerling potato oven fries. Simple and so delicious!

Drooling here. This looks amazing, and I love balsamic vinegar glaze. I make my own usually, but Italian glaze sounds even better. Yum! Delicious!

Yeah I agree with you on the simplicity of fun summer food. It’s almost like a grill can do no wrong.
One thing I do refuse to believe though, is that there can be food boredom in Jenn’s House. Those words do not exist together in your world 🙂

That looks really good and what I like best is that you did not grill/heat the mozzarella and tomato but left it more as a salad and counterpoint to the burger.

That looks so totally yummy! What a perfect summer meal and great combination. I agree with Joan that keeping the Caprese part more like a salad is an awesome idea for flavor and texture.
And I am bored with burgers, so this is a welcome idea!

Oh my goodness, Jenn – this is making my mouth water and I’m still full from taking my mom, C and my nephew out for breakfast. What a brilliant combination. I am SO making this, especially as I have some wonderful grilled chicken in my freezer right now. (But making it later – I AM full).

Nice! I am a huge fan of this time of year because of caprese salads. One of my favorite things to do with fresh tomatoes. Now if I could just get my bloody tomatoes to turn red I would be in heaven.
Love the burger idea with this. Did you have any drying out with the chicken burgers? The couple times I have tried them they come out dry.
