Recipe: Red Beet Pasta
Here is another fun pasta recipe! This is a dish I made in the not too distant past. Beets are in season right now and although I love nothing better than a delicious roasted beet salad, I was beginning to get really tired of the plethora of beet vinaigrette salads I have been making. So I decided it would be fun to incorporate roasted beets into a pasta dish, not only for a change of pace, but also to stretch the beets and give us a few extra meals. It was really simple but the effect was outstanding! When I tossed there beet vinaigrette with the pasta – look what happened! Red Pasta! Isn’t it just beautiful!?
What I did:
I boiled some multigrain pasta. Meanwhile, I took my roasted beets and cut them into quarters. I also had some roasted red onion chunks that I roasted with the beets. In a large mixing bowl, I then mixed up a vinaigrette with balsamic vinegar, olive oil, salt and pepper, as well as some dried thyme. I thew my beets and onions into the vinaigrette. I also quickly blanched some beet greens. When the pasta was finished, I drained it and threw it into the mixing bowl with the roasted veggies and vinaigrette. I then topped everything with some feta cheese. It was delicious and yummy!

Hey Mallika! Usually I roast the beets at 425 F for about 40 minutes or so.

Wiw i love that colour of the pasta.
I have never cooked myself with beetroot.
Back at home my mom used to make a curry from beetroot which we kids loves ad when we ate them with rice the rice turned pinkish read 🙂

Beeyouteefull! 🙂 Greeks are big on beets so this pasta is right up my alley! I just pickled a bunch of beets last night myself. Eat up those carbs Jenn, you’ll need the strength to draw the bowstring. What is your pull weight these days?

How fun to combine beets and pasta. I love beets but nobody else at my house does so unfortunately I don’t cook with them very often. now, maybe if I follow your way and put them in a pasta, i can at least convert my daughter 🙂

Oh Jenn, I LOVE beets but I have never seen them served with pasta. What a great idea! Your dish is so pretty and full of flavors I adore.
I’m pretty sure it will be a butter and parm pasta night for the kids if I make this one, though. They don’t share my love of beets.

Thank you for posting this! I love beets and feta…I recently posted on a roasted beet and potato salad with goats cheese.
I never thought to add pasta to the mix…and with roasted onions!
