Recipe: Sunset Daiquiri
Sometimes you have leftover alcohol and you feel the urge to create a nice unique cocktail. Such was the case this week. Summer is here in full blast and I was feeling a little fruity! I am not usually that much into frozen drinks – brain freeze and all that, but on this day, I wanted something frozen, fruity and different. We had some leftover coconut rum from Easter and I decided to take a tour through the fridge and pantry to come up with a new drink! Another Leftover Queen classic move , but this time with a frozen cocktail drink – perfect for those steamy summer nights! This beautiful sunset colored drink is what was made. This is a great drink to surprise your guests at your next summer party or BBQ.
INGREDIENTS:
3 shots coconut rum
¼ of a fresh papaya
¼ cup dried apricots
½ cup fresh or frozen mango
¼ cup canned pineapple
1 tsp honey
1tsp cinnamon
10 ice cubes
the only thing I would have added if I had it was about ½ cup of unsweetened coconut milk – the drink was a bit too thick, but I didn’t want to cut it with water and we had no appropriate juice for this.
METHOD:
Place all ingredients in the blender and blend until smooth. Serve in margarita glasses.

Have you ever made frozen drinks in an ice cream maker? Winedeb told me about it and I am intrigued! I suppose it negates the need for ice!
I do have a blender, so I can try your yummy drink!
