Recipe: Leftover Bagel Bread Pudding
This is the leftovers from the last Daring Baker’s Challenge – Bagels! I love bread pudding and I made several sweet versions of the bagel in addition to the ones I showcased for the challenge and stuck them in the freezer, so I figured what better way to use them up than by making some bread pudding! INGREDIENTS:
4 cups of bagel pieces
3 ½ cups of whole milk
½ cup of caramel coffee creamer (didn’t have enough milk, so took a gamble with this and it was really good!)
3 eggs
½ cup melted butter
1 cup of sugar
1 c. shredded coconut
¾ cup chocolate chips
1 tsp pure vanilla extract
METHOD:
Butter a large baking dish. Preheat oven to 350 F. Place bagel pieces into baking dish, sprinkle with coconut and chocolate chips. In a separate bowl, whisk together the milk, coffee creamer, eggs, melted butter, vanilla and sugar. Once sugar has melted, pour custard over the bagel pieces and bake for about 45 minutes. Remove from oven and serve immediately with vanilla ice cream or whipped cream (or both!)

Jenn, my mother would be so proud of you … if only you were her daughter instead of me. She is so creative with the leftovers and says that wasting food is a sin. I asked her once to locate that sin in the bible and she could not.
Anyway, you are a clever girl to think of using bagels. But it does make sense when you think about it. Yum.

looks amazing – my mum used to make bread and butter pudding and it is when I see a version like this with chocolate and good bread that I think I should really try it myself some time

Great recipe. I split the milk with whole milk coconut milk and evaporated milk. I also added some cinammon, and did 1.2 light brownsugar 1/2 white sugar OMG what a hit! served with ice cream and a rum sauce. they are still fighting for more

what is the texture like when using bagels? how is the sweetness level?

we were just given gallons of almond milk and about 30 bags of bagels at our church…will use them this week to make this bread pudding, will probably add some apples or blueberries to it, then we will serve it for dessert on Wednesday at our Feeding the 5,000 ministry, where we feed the less fortunate and the homeless…they always love a hot, stick to the ribs dessert :o) We’ve also added mashed bananas to it in the past…and drizzled caramel sauce on top :o)

I made this for a Saturday morning kiddish at my synagogue. It was a big hit and such a delight to see everyone, including the rabbi, enjoy this! I will make it again, for sure!
P.S. I added pumpkin seeds and cranberries to the dish… It was delish!!

I’ve made bagel bread pudding before when I had different leftover sweet bagels (cinnamon, blueberry) because I hate to waste food. I also added some sliced canned peaches that were in the pantry. It was just ok, better with vanilla ice cream on top. Mine wasn’t “custardy” enough.
Interested in trying your version and using another commenter’s suggestion of 1/2 brown and 1/2 white sugar.
