Recipe: Pesto Burgers!
Here is something really simple to give your next burgers a little somem’ somem’ to keep it fun! I had leftover ground turkey, fresh mozzarella and some ciabatta sandwich rolls that needed to be eaten ASAP. So this is what I came up with and it was really good for something quick and thrown together. I wasn’t even going to post it here, but it turned out so well , got such rave reviews- and was made with those classic Leftover Queen principles so I have decided to share it!
INGREDIENTS:
Ground turkey – feel free to use whatever you have.
Fresh mozzarella
Pesto
Mayo
Tomato and Onion slices
Ciabatta sandwich rolls
METHOD:
Make 2 small burgers instead of one large for each person. Grill them up or broil them – however you best like them. Place one long half of a ciabatta roll per person under the broiler. In a small bowl mix 3 TBS mayo and 3 TBS pesto to make a pesto mayo. When everything is cooked, place 2 small burgers on the broiled bread, top with a thick slice of mozzarella cheese and place back under the broiler for about 30 seconds, until the cheese is about to melt. Take back out, put on plates and garnish with pesto mayo and your tomato and onion slices! Enjoy!
Servin vary depending on quantity of ingredients!

Interesting…I don’t think I ever have left over ground anything that isn’t cooked. I made some red pepper pesto last week…that would kick ass with a turkay burger as well!

Wow! You said it Jeff that would be soooo good!

Truth be told…ground turkey and me ain’t best o’ friends. Dry dry dry…though I would contemplate a half ground turkey half chicken sausage combo…bet that probably wouldn’t be terrible *shrug*

Probably that would be very good! It’s all what you like. I mean I am not a huge chicken person but some people love it! I guess it’s a personal preferance thing!
