Recipe: Pomegranate Granita
Each week on my other website, Jenn’s Travel Close Up, I posted a Mediterranean Recipe of the Week. I decided to now post those recipes here, since this website is all about food! So I hope you will come back each week to see what’s cooking in my Mediterranean Kitchen!
Now for the recipe….
Granita is the adult version of a snow cone, but with a smoother consistency. If you are looking for a nice refreshing summer treat that is as beautiful as it is tasty, try this Pomegranate Granita.
INGREDIENTS:
2 Cups of water
½ Cup granulated sugar
½ Cup Pomegranate Juice
½ Cup Lemon Juice
Lemon Zest and Pomegranate Pearls for garnish
METHOD:
Heat the water and sugar together on low heat in a medium saucepan. Stir until sugar dissolves completely. Bring mixture to a boil. Remove from heat and allow mixture to cool completely.
Combine the Pomegranate and Lemon juice to the syrup after it has cooled. Place in a shallow container that is freezer safe. Freeze until solid.
After mixture is frozen solid, plunge the bottom of the frozen container into very hot water for a few seconds. Turn the Frozen mixture out onto a cutting board and chop into chunks.
Place the chunks in a food processor and process it until it is a smooth consistency without being too slushy. Serve in bowls and garnish with lemon zest and pomegranate pearls.

This looks fantastic. I have saved the recipe. We have lots of pomegranites here in Marrakesh. I have never tried making pomegranite juice though, which the recipe calls for. Have you? and if so, how is it done?

Hi Maryam!
How I envy all the pomegranates you must be able to eat, fresh. To me pomegranates are just so beautiful, so exotic and so full of rich flavor.
Anyway, usually I cheat and just use store bought juice.
However, if you want to make your own, just cut the pomegranate into sections, scoop all the seeds out (discard the white membrane), place seeds in a potato ricer and squeeze all the juice out.
Let me know how you like it – the lemon kinds of cuts the richness of the pomegranate, you could try straight pomegranate as well…or blood orange juice would be delicious too!
