Green beans are delicious when sautéed with nuts. I like to make mine with toasted almonds, but you could substitute with pine nuts, sunflower seeds, or even walnuts! This dish is delicious with lots of garlic and bright with citrus undertones!


1 lb Fresh, Frozen, Canned Green Beans
½ Cup Nuts or Seeds, chopped
2 Cloves of Garlic, chopped
1 Tsp Paprika
3 Tbs Extra Virgin Olive Oil
¼ Cup Lemon or Lime Juice


If you are using fresh green beans, put them in a large saucepan and cover beans with water. Cook over medium- high heat until boiling. Boil for about 5 minutes or until al dente (cooked but not mushy). Drain water and set aside.

In a small skillet heat 2 Tbs of olive oil. Sauté nuts or seeds and garlic until golden brown. Remove from heat and add Paprika. Set aside.

Add 1 Tbs of olive oil, and nut mixture to green beans. Sauté until it is mixed well together. Squeeze citrus juice on top and toss.

Serves 4.
